Ingredients:

  • 3 tbsp extra-virgin olive oil, divided
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp ground pepper, divided
  • ¼ tsp salt, divided
  • 4 cups butternut squash, cubed
  • 1 tbsp minced shallot
  • 1 tbsp pomegranate molasses (see Tips)
  • 1 tbsp balsamic vinegar
  • ½ tsp dried thyme
  • 6 cups baby arugula
  • 1 burrata ball sliced
  • ¼ cup toasted chopped walnuts

Directions:

  • Preheat your oven to 400 degrees. Combine one tablespoon of oil, cumin, pepper, salt, and paprika in a medium-sized bowl. Add the squash and toss. Spread the mixture on a baking sheet and roast.
  • Whisk the vinegar, shallot, molasses, thyme, pepper, salt, and remaining oil in a small bowl. When the squash is fully roasted, toss the arugula and vinaigrette. Put on a serving plate, and place the squash over the arugula and Burrata slices. Drizzle the dressing over the salad and sprinkle with the pomegranate seeds and walnuts.

Ingredients:

  • Potatoes
  • Carrots
  • Butter
  • Garlic
  • Salt
  • Pepper
  • Water
  • Whole milk
  • Parsley
  • Chicken base

Directions:

  • Peel and chop the potatoes and carrots. Put them in a small pot with three cups of water, then add the chicken base with the parsley. Bring the pot to a boil over high heat and let simmer for 20 minutes.
  • While the veggies cook, make your bechamel sauce by adding flour, salt, and pepper to melted butter. Add the whole milk to the mixture slowly. Whisk the mixture until it becomes creamy.
  • Add the sauce to the veggies and stir well.
