Butternut Squash Pastasotto
Squash is one of the most beloved fall foods. Enjoy the season's flavors for lunch or dinner when you try this simple butternut squash pastasotto recipe. Best of all, it makes four servings, so you will have plenty of leftovers for the rest of the week if you make it for yourself.
Ingredients:
- 2 lb. butternut squashed, seeded, peeled and cut into one-inch cubes
- Salt and pepper
- 4 tbsp olive oil
- 6 tbsp butter
- 10 whole fresh sage leaves
- 1 tbsp fresh sage
- 1 lb. penne pasta
- 1 ½ cups dry white wine
- 3 ½ cups low-sodium chicken broth
- ¾ cup grated Parmesan
- ¼ cup walnuts
Directions:
- Preheat your oven to 425 degrees. Toss the squash with two tablespoons of oil, one-half teaspoon of salt, and a couple of grinds of pepper on a baking sheet and bake for 30 minutes.
- Heat the butter and remaining two tablespoons of oil in a large pot over medium-high heat. Add the sage leaves and fry until crispy. Put them on a towel-lined plate.
- Add the onion to the pot, cook, and stir frequently. Add the pasta and stir for about four minutes.
- Pour in the wine and cook for five minutes. Add the broth and stir until absorbed. Fold in the squash, sage, Parmesan, salt, and pepper. Stir until creamy.

Ingredients:
- Arugula
- Sweet potatoes
- Chickpeas
- Apple
- Tahini
- Maple syrup
- Quinoa
- Dried cranberries
- Goat cheese
Directions:
- Cook the quinoa and sweet potatoes.
- Add the arugula to a bowl and top it with the cooked quinoa. Add the remaining salad ingredients.
- Make the dressing by whisking the maple syrup and tahini. Drizzle over the salad.
